Just when I think I’m feeling better I get sick again. About the only good thing I can think of from these past week of being sick is that everyone has lost some weight. I’ve been losing 2 pounds every day, as all I can eat is chicken noodle soup and saltine crackers. And drinking lots of green tea and ginger ale.

There’s been lots of naps and lots of tissues used. That’s all I can say about these past several days. It’s been a sickly blur of bad daytime TV and tossing and turning under the covers.

I have decided to do what ever it takes to come up with a nice sleek and trim Beach Body for next summer. Last summer we didn’t get a chance to go anywhere for fun in the sun and in any body of water for a variety of reasons, so it is important to me and the kids that next summer we make up for lost time. It is important for all of us to spend good times like that when we can and I really missed that this last summer.

With all of the holidays coming up that we all know can be devastating on anyone who is watching their weight I have started an Extreme Body Workout and will continue with it all the way through until I find myself laying on a beach somewhere, soaking up the sun and drinking a nice cold drink with one of those cute little umbrellas in it. Homemade Onion Rings

Found a recipe in a waiting room magazine that was geared toward teenagers. I thought if teenagers can make this, then surely I can master it, too.

The recipe was very simple – take some breakfast pancake mix, add some seltzer water and a sprinkling of chili powder and salt. Then coat the vidalia onion slices and drop them in hot oil for 2 minutes.

Tried it tonight and wow they taste great and were incredibly easy. This recipe is a keeper!

Birthday Girl

It’s my birthday! I’m excited about having a nice dinner tonight. We are all going to meet up at the P. F. Chang’s restaurant for dinner. I love the food at P. F. Chang’s and since it is my birthday I get to insist on going to this restaurant. I also want a piece of the most excellent cheesecake – no traditional birthday cake for me! We have the Cheesecake Factory in Green Hills and I think we’ll have time to drive over to the Cheesecake Factory after dinner and pick up a couple of pieces of cheesecake for dessert.

Try White Vinegar Instead

My sister just told me that I could be using white distilled vinegar instead of liquid fabric softener in my washing machine that works just as well as any fabric softener around. I thought she had fallen off of her rocker at first but then I decided to go ahead and give it a try and lo and behold she was right. Now how cool is that? It is much cheaper and is better for the machine!
